This strength in our food can actually be measured by The Brix Index.
A tomato for example with a top Brix reading could stay strong and healthy for up to a year.
My community garden has been giving us workshops sponsored by the local council on how to increase the quality of our soil.
The soil in our area is a poor clay soil and we are adding liquid worm castings to the soil, along with a mixture of worm castings and manure.
Lucerne mulch is also a good addition on top of the worm castings.
All of these additions break up the soil microbes and allow water into our soil while encouraging worms and a good balance of bacteria and fungi.
Even in this one community garden we are discovering different placement factors make soil react differently so it a matter of watching and getting to know our own patch.
I am about to head down to my patch now. It is ongoing work to grow healthy strong food.
The community garden is totally organic, so no chemicals.
I enjoy being part of this new food movement of worldwide community gardens which has so much potential for helping our planet and our climate.

Nice that it is totally organic as it unbalances things if one patch is organic and the next is not.
I am sure you find the gardening relaxing even if a little tiring. Good at building up your Vitamin D which is so good at fighting the latest bugs like H1N1....no immunizations with their scary reactions needed :)
